I ain't got time to do a proper sunny side up anymore. Unless I feel like eating raw whites on top.

Over easy is just more convenient.

Jacques Pepin sunny side up eggs that are shown in an earlier post are amazing. They take very little time to make and will absolutely be worth your time.

Growing up my family used the terms interchangeably. I was probably 20 before I even knew there was a difference, lol. I generally still go with over easy because I don't like the whites to be underdone which they tend to be most of the time with sunny side, but I have done the basted egg thing over the years and its quite good. Just more work than a quick flip. Of course that quick flip ends up with my yolk broken probably 30% of the time and basted doesn't so its definitely the better option if you aren't lazy like me.

Does khachapuri count? It's a Georgian dish I make where you make a bread "boat" and fill it with cheese, eggs and herbs, then bake them in the oven. The egg firmness is adjusted to the diner's liking by adding them at the right time.

Sunny side is how I visualized ideal eggs in my mind but in actuality, I can't tell the difference in the flavor between sunny side and over easy so they're practically the same. Sunny side presentation is definitely the more "iconic" look in my mind though.

I was a big fan of sunny-side-up when I was a kid, but over-easy is the way to go. Adds a bit more flavor to the yolk, and there's still plenty of goop to dip your sausage into.

(I swear I didn't mean that last part to come out like that, but I can't think of a better way to say it right now)

My problem is that I don't quite have the skill to do a proper flip to make them myself, I only get them right about a third of the time when I try to make them over easy. One of the cooks at work is a genius when it comes to flipping eggs, he makes it look so damn easy. At home, I end up making scrambled about half the time anyway.

Doing it the 'proper' way is a pain in the butt.

Poaching couldn't be easier. Put eggs in, wait some minutes, done. It's as easy as boiling water.

I used to do over easy because I love the really runny yolk.

However, at some point years ago I became disgusted at the uncooked whites that surround the yolk in over easy, so because of that mental block I've had to start cooking mine over medium. Kind of a bummer, but I want to throw up when I see the those uncooked whites now.

Over easy because it's the easiest and quickest way to be sure the egg whites are cooked but the yolk is nice and runny. Anyone who's breaking yolks with their flip either needs a new pan or new spatula. I can't remember the last time I broke a yolk.

My mother would some times make eggs for her and my father. Some times a yolk would break. By some remarkable coincidence, it was always my father's egg that had broken.

Sunny side or is there such a thing as medium? I don't want the egg whites runny, egg yolk being runny is fine, just not the whites. It kills my appetite. Also like it soft boiled or scrambled too.

I generally do over-easy unless I'm looking to impress someone, as they're a bit quicker to make and taste exactly the same, with the sole compromise being that they don't look quite so attractive.

Sunny side. I love dipping toast in the yolk.

You can do that with over easy. It's only flipped over for a moment, just to make sure the egg whites on top are cooked. You get just as much runny yolk.

Anyone who picks "over" over Sunny is a monster to me.

And to those that don't like undercooked whites, you can just tilt the pan slightly and spoon up a bit of the hot oil and drop it on top of the whites. That will solve that problem.

I was always an over easy guy but found a great breakfast place and they do sunny side up perfectly so I've leaned that way lately
